AGED VELLÓN DE FUENTESAÚCO ZAMORANO CHEESE DENOMINATION OF ORIGIN, made in an artisanal way with raw milk from Churra and Castellana sheep, pure and indigenous breeds from Zamora province, having dairy aptitude and very remarkable quality levels recognised.
Hard rind, pale brown cloured, well marked and defined mould soaked with olive oil during its maturation. The mass is firm and compact and it may present small sized eyes, evenly throughout it. It Shows yellowish ivory colour. It has genuine aromas and flovours, characteristic of sheep raw milk, well developed, persistent on the palate and very intense. You can truly appreciate smelling and tasting features as floral aromas (honey, rose, violet ...) fruity (hazelnut, walnut,chestnut, orange), etc.
