Ivory natural rind, with well marked and defined design, bathed in olive oil during maturation. The paste is very buttery, ivory white, and can have small eyes, spread evenly throughout the cut. It has genuine aromas and flavours, typical of raw sheep’s milk, well developed and persistent on the palate. You can appreciate its taste and olfactory characteristics in which we can remember lactic flavours (fresh milk, curd, butter …), vegetables (cut grass, hay …), etc. due to the traditional grazing system.
